Steak? I deal in money, not meat ;D The best thing to do is go to www.betfair.com and click on their help option as they can explain a lot better than me. But in short, you can either back (be punter) or lay (be bookie) on an event. The odds were updated throughout the 90 minutes. I played backer before the game and after 70 minutes I decided to play bookie. Selling off the bet meant I would have won less had West Ham gone on to win, but it also meant that whatever the score I could have broke even at worst.
