Following on from last years positive feedback here it is again..............
100g of Self Raising Flour, 1 egg, a couple of spoons of sugar and milk to the thickness of mix you require based around the half pint level.
Chuck in the flour and egg (a measuring jug saves on washing up!). Add about a cup of milk to see how it goes, and mix. Add more milk to the thickness you require, then the couple of teaspoons of sugar (or table if you are that way inclined!). Pour and cook in your frying pan with butter.
If you make a mix that is not too runny, you will end up with two pan sized nice, thick, pancakes. (We don't do thin crepes here!)
I'm in the sugar and lemon category when I'm allowed to eat them!
